Rediscovering Happiness by Being a Kid
Isn't it amazing to learn something from someone you least expect to? They say that one learns much through the eyes of a child. That somebody was not kidding at all.
Yesterday taught me a lot from my kids. Something irreplaceable and true, that somehow I had forgotten for a long time. It is relatively easy to forget the simple pleasures of life once you reach a certain age. You get jaded and too stressed to even think of smiling. Yet you wonder and envy how small tykes can smile and laugh despite their obstacles and occasionally falling down.
I was amazed looking at my baby boy and little girl, yesterday, as they played with my younger cousins outside at the lawn. You could see the wonder in baby boy's eyes as he examined the grass, the leaves, and the small plants. One could see the laughter in their eyes as they watched how the others ran around, jumping, attempting to cartwheel across the grass. Pretty soon, little girl was bowing on the grass trying to flip over, too! Baby boy wanted to do so, too, but he later stuck to his conquests around the garden.
By and by, I joined the games as well. I attempted to cartwheel, too! To my dismay, I just couldn't quite get it right. After a series of tries, my babies were squealing with delight as they saw me tumble on the ground. Both ran to me laughing and giggling, it just made me smile more.
I've thought about it, and I wondered. When was the last time you had genuine fun? No, not shopping, not playing online games, just old fashioned playing. Kids these days do not exactly play hopscotch, jungle bars, and stuff. Perhaps we should do these things too..
Here are some things I could think of that perhaps you would give a try. Let's see how you feel after picking something from the pack:
- Cartwheels. Do you know how to do cartwheels? If you don't, don't you think you missed something in life by not being able to do it? If you do know how to do cartwheels, do you think you still have it in you?
- Rollerblades. How long has it been since you've put on a pair of rollerblades? Wasn't it fun to rollerblade or rollerskate? I bet you fancied yourself to be Evel Knievel to jump places and race on by.
- Skateboards. I love skateboarding. Turns out, I still can manage to stay on board the skateboard, but I'm having problems doing a 360 deg these days.
- Hopscotch. We all have our different styles of playing hopscotch. But when was the last time you played it? I can remember the last time I played this was back in elementary. Too long ago.. I'm thinking of playing this next Sunday.
- Jump Rope. Perhaps you use this as a training device, or for fitness. But do you remember how it felt to jump rope just because? Or played Double Dutch just because it was fun. I'm willing to be there are some of you who can hardly make it to 20 counts before you trip your feet.
- Dodge-ball. There would be some who would have nightmares because of this game, but there are some who love it, too! I can still remember the laughter and shrieks of joy when my playmates and I did this. Last night, the kids had fun trying to hit me with their toy balls. Pretty fun though.
There are so many games and things we used to do as kids without the determination or seriousness of an adult. It would be very nice if once in a while we relaxed a bit and remembered how it was when we were younger. I guarantee you'd be grinning like the Cheshire cat after a couple of tries. Just like old times.
Have fun!!

Saturday Recipes: Easy Quick Fix Club Sandwich
My day started out with a huge craving for a sandwich. All I want is an honest to goodness Dagwood sandwich. Even thinking about it right now is making my stomach growl. Considering that I haven't had a decent breakfast or a good enough lunch, I think I just might be able to have room to down one and a half of a Dagwood sandwich. Care to test my theory? :D
The Dagwood Sandwich
However, in light of my health goals and other pocket concerns, I think I might have to resort to just making my own sandwich. I actually found a recipe online, but since there are some ingredients that are hard to find or are costly, I tweaked it up a bit and I believe this will serve as a basic club sandwich.
INGREDIENTS
- 2 slices crisp bacon
- 3 slices toasted bread
- 3 tablespoons mayonnaise
- 2 leaves lettuce
- 2 slices cold cut ham (can be substituted for any meat you prefer)
- 2 slices tomato
DIRECTIONS
- Place bacon in a heavy skillet. Cook over medium high heat until evenly brown. Drain on paper towels.
- Spread each slice of bread with mayonnaise. On one slice of toast, place the ham and lettuce. Cover with a slice of toast, then the bacon and tomato. Top with last slice of toast.
There! Think that's easy enough? It's yummy, too! I believe it could pass off as a complete meal already.
As for me, my stomach is really, really noisy now... Sandwich!! Sandwich!!
Alright, folks! Chow down!

An attempt at Anger Management: My techniques
When angry, count four; when very angry, swear. ~Mark Twain, Pudd'nhead Wilson, 1894 Every one has bad days, and unfortunately, I've had a couple of them over the past few ones that passed. If you have watched Adam Sandler's Anger Management movie, I think you would understand quite completely that I have the same mode of coping with anger as he does at the start of the movie. And yes, perhaps I have go to anger management classes. But those are quite costly, and so, after watching the said movie for over 10 times now, I have developed some anger management techniques that have helped so far. I haven't pulled out my gun and shot everybody I see - YET.
So these are the things I do in order for me to calm down or to at least relieve me of my anger.
- Listen to Rock 'n Roll. My particular favorite is the Guns n Roses' Sweet Child o' Mine. Whenever I need to clear my head, I just play this and somehow I feel better. Weird, I know, considering that some people choose to listen to Classical musing or some ballad in order to calm down. Nothing works for me better than listening to GnR, Twisted Sister, Metallica, Queen, etc.
- Cleaning. Somehow diverting my pent up frustration and anger into cleaning makes me more productive and somehow it does help calm me down. At least some of the chores get done.
- Walking/running. A diversion from the anger. But at least I am not harming anybody else. Give me my running shoes, an mp3 player or one of those cheap Php. 50.00 radios and I am good.
- Eating chocolate. I have just recently discovered what people find in chocolate when feeling depressed or upset. Indeed, it does make you feel better. However, it is not as effective for me as listening to rock or running.
- Writing. This is one of my common outlets for ANY emotion I have. Although lately, I have not had the opportunity to vent out much online, but I still have my handy dandy Notebook! Anybody reading it would know how I am feeling especially if they feel the pages. Because the angrier I am, the harder I write. Hahaha!
- Dancing. Don't get me wrong, I am not the regular Janet Jackson when it comes to dancing. But I love to dance my life away. It comes most naturally when I want to lose myself I guess. Although it has been some time since I have done this (my husband laughs at my dancing).
- Counting to 10. I don't know where I found this trick. But I think this has been widely given. Of course, the quote above also helps in this case. ;)
- Singing. I do not do this as much because in as much as I love, love, LOVE music, it simply does not love me back. Translation: I cannot sing. I do hum though... and I whistle!
- The "I feel pretty song". I love this song, too. And though this does not help much with my anger, it makes me laugh, and I still love to sort-of sing this. Nyahahahaha..
I wish I could make it to 10. But I cannot think of any more techniques that I normally do when I'm angry. I need to control my temper and anger especially since I have babies. But you know what I really want to do? I want to try punching somebody real hard. OR simply tell somebody exactly how I feel. Like, "I HATE YOU." But then again, maybe not.
Temper's the one thing you can't get rid of, by losing it. ~ Dr. Buddy Rydell, Anger Management What do you do when you're angry?

The Secret Recipe of the Mouthwatering Watermelon Salad
My mom has a lot of tricks up her sleeve. What I love about her cooking is that she tries not to put a lot of twists and turns into anything. Perhaps it is because she is a very busy woman that she has accumulated a number of quick fixes for different occassions. Sometimes her methods apall me (being my grandmother's granddaughter), but most of the time, I love to copy them.
One of her many quick treats is the one I am about to share. I have been dreaming of this for days now, and I hope you can enjoy it with me.
The summer heat is just absolutely killing me. Who wouldn't want to cool down with a treat as juicy and yummy as this..?
I call this one, "AiAi's Chop n Mix Watermelon Salad".
Ingredients:
- 1 watermelon (the size is up to you)
- 1 box cheese (I use EDEN)
- 1 large can evaporated milk
- 1 small can condensed milk
Instructions:
- Cut the watermelon into small bite sized pieces. The seeds may be taken out or not. Set it aside.
- Cut the cheese into small cubes. Set it aside.
- Open the cans of milk.
- Pour the milk into the watermelon. Make sure to taste it so that you can adjust it to your preference.
- Add the cheese to the watermelon in milk. Mix it well.
- Put salad/mixture in the refrigerator until cooled.
- Serve.
The watermelon salad can be served with ice cubes mixed in it.
Even as I write this, my mouth waters. *sigh* I can't wait to mix it up today. It is not so complicated, and I like it. Certainly a very nice treat for the summer, too! ;) Enjoy!!!Labels: fruits, healthy living, homegrown, nutrition, recipes, salad |

How to Make Delicious Potato Salad
One of the things my friends swear by, is my grandmother's potato salad. They say it is absolutely, YUMMY! So, I will do the world a favor by sharing her version of this salad to you. It is not that hard, and you do not exactly have to follow everything by the book. There is no exact measuring and you can adjust everything to your preference. Isn't that nice? ;) You'll love it! Trust me. If not, well then, at least you tried. :D
I call it, "Lily's Potato Salad". Here it goes:
Ingredients:
- 2 kilos potato
- 2 tetra packs Mayo
- 1 can pineapple chunks
- 1 chicken breast
- 2 apples (preferably Fuji apples)
- pepper
- sugar
- salt
- pickled relish
- mustard
- white onion (finely chopped)
- chicken cubes
Instructions:
I.
- Wash the chicken breast and put to boil. When boiling, but garlic, onion, chicken cubes, salt, vetsin (optional), and a dash of pepper.
- Check if chicken breast is already soft or cooked.
- Take the chicken out of the soup to cool. DO NOT THROW AWAY CHICKEN STOCK/BROTH.
- Once chicken is cooled, shed chicken into small strips.
II.
- Peel the potatoes
- Depending on the size of the potatoes, chop until 1/4 of the size of a small potato.
- Cook the potatoes in the chicken broth. [To test if potatoes are already cooked, push a toothpick into one. If it goes right in, then it is ready.]
- Use a colander when removing the potatoes from the broth.
III.
- Mix the chicken strips and potatoes, pineapple chunks [drained], and chopped apples [same size as the potatoes].
- Season to taste using salt, pepper, mustard, pickle relish, mayo, etc.
Enjoy! If you have questions or clarifications, please do not hesitate to ask.
[Edit: I forgot something, guys. Awfully sorry. I left out the pineapple chunks and the chopped apples.]
